Our viennoiserie is crafted with a focus on flavor and texture. To that end, we use the highest quality local and regional ingredients, including Farmer Ground Flour, Kriemhild Dairy Butter, and the best seasonal produce from the area’s many incredible farms.
About us
Flake is operated by Max Hull, a James Beard Award-nominated chef who grew up in Ithaca and always dreamed of returning to open something of his own to share with the community and work with the world-class produce the region has to offer. His wife, Claudia, is a designer and photographer and helps to breathe life and personality into the customer-facing side of the bakery.

We are located in the Just Be Cause center at 1013 W State St, Ithaca, NY 14850. During the pick-up window, park in the parking lot and check in with someone in the front of the building. If there is no one there, please ring the doorbell next to the sign. We will check in with you and get your order.
If you have a disability or need assistance, we’re happy to bring your order out to you—just contact us ahead of time.

Please get in touch through our contact form so we can make alternate arrangements for pick-up. Please note that because our pastries are perishable, we can’t hold them past Saturday. If we can’t reach you or arrange a same-day alternative, we’ll donate your order to the Friendship Donations Network, so they go to a good cause.
Missed pick-ups are not eligible for refunds.

Pick-up Policy
We’ll attempt to contact you using the information you checked out with shortly before our pick-up window closes at 2 pm. If you respond that day, we’ll do our best to arrange an alternative same-day pick-up, depending on our availability.
Because our pastries are perishable, we can’t hold them past Saturday. If we can’t reach you or arrange a same-day alternative, we’ll donate your order to our neighbors at the Friendship Donations Network. Please note, missed pick-ups are not eligible for refunds.

If storing overnight, wrap croissants in plastic wrap or a ziploc bag. These are best enjoyed lightly toasted at 300°F for 5 minutes. If storing longer than overnight, croissants can be wrapped and frozen. Pop a frozen croissant in a 300°F oven and warm until tender.

There is street parking available on W Seneca St if the lot is full.

Cancellation Policy
Need to cancel? Just let us know before Thursday at 9 pm when the pre-order window closes, and we’ll refund your order. After the pre-order window closes Thursday at 9 pm, we can no longer refund your order.
